Chipotle Style Bean Burrito

Description

I went on a mission to make the best bean burrito that rivaled Chipotle and I think I did just that!!

Ingredients

Instructions

Burrito Filling

  1. Add oil to a pan and heat

  2. Add in cabbage and sauté for 5 minutes till they soften and turn slightly translucent

  3. Add in the tomato paste and sauté for 1 minute then add in crushed tomatoes cumin, oregano, and salt and saute on low heat for 5 minutes

  4. Add in the black beans and half the pinto beans, with the other half mush and squeeze the beans and let it cook on low heat for about 5 minutes so all the flavors marinate together

Guac

  1. Mash together all ingredients till smooth or keep chunky - whatever you like!

Burrito Assembly

  1. Warm up tortilla

  2. Layer burrito in order
    - 1 tbsp guac
    - 1 tbsp sour cream
    - 2-3 tbsp cooked brown rice
    - 2-3 tbsp filling
    - Sprinkle of shredded cheese
    - Sprinkle of lettuce

  3. Fold burrito tucking as you fold

  4. Pan fry until golden & cut in half

  5. ♡ Say a prayer of gratitude, serve with love, and eat with joy ❤️

Note

Serve with salsa or any other dips you like!
