Cook the rice according to package instructions
Chop up shiitake mushrooms, chop or shred the cabbage, and chop or shred the carrots
In a large frying pan, add olive oil, the chopped veggies, and the grated ginger
Cook on medium heat for 10 minutes until veggies are cooked but still firm
While the veggies are cooking, add all sauce ingredients to a jar and mix together
Add the cooked rice and mix
Pour sauce over the rice and veggies and mix until everything is coated in the sauce
Let cook for 2-5 minutes until the sauce is absorbed and the rice becomes a bit crispy
Sprinkle with sesame seeds and chopped red chili for garnish
