Chunky Oatmeal Raisin Cookies
Ingredients
- 1 cup butter (cold, chopped into cubes)
- 1 cup brown sugar
- 1 flax egg (1 tbsp ground flax and 2 tbsp water)
- 2 cups gluten free flour (or all purpose flour)
- 1 cup rolled oats
- 1 teaspoon cinnamon
- 1 cup raisins
- 1⁄2 cup walnuts
- 3⁄4 teaspoons baking soda
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt
Instructions
1. Preheat oven to 400F.
2. Add butter and sugar into a bowl and cream together until light and fluffy (you can use a hand mixer or use a fork!)
3. Add in the flax egg replacer and mix together.
4. Add the remaining ingredients and gently fold together into cookie dough.
5. Let the dough chill in the fridge for about 10-15 minutes.
6. Separate dough into large balls and place on lined cookie sheet. Lightly press on top of dough to smooth out. The dough makes 8-12 extra large cookies.
7. Bake for 10-12 minutes or until golden brown on the top. Let them rest for at least 10-15 minutes to set before eating
