Ingredients

For the Salad:
  • 1 cup quinoa (cooked)
  • 1 cup carrots (shredded)
  • 1 cup cucumber (chopped)
  • 1 cup red pepper (chopped)
  • 2 cups kale (chopped finely)
  • 1 cup cabbage (chopped)
  • 1 cup edamame
For the Dressing:
  • 1⁄4 cup soy sauce
  • 1⁄2 cup almond butter
  • 2 tablespoons maple syrup
  • 2 tablespoons rice vinegar
  • 1⁄2 lime (juice)
  • 1 tablespoon sambal oelek

Instructions

1. Cook quinoa according to package. Set aside.

2. Finely chop all veggies & assemble into a bowl.

3. Add all dressing ingredients to a jar and mix until combined.

4. Mix salad & dressing together.

5. Top with a sprinkle of chopped almonds and sesame seeds.

6. Say a prayer of gratitude, serve with love, and eat with joy ❤️
