Sweet Potato Green Bean Curry

Ingredients

  • 1 tbsp Cumin Seeds
  • 1 tbsp Mustard Seeds
  • About 15 curry leaves
  • 1 tbsp chopped Green Chile
  • 1 tbsp Fresh Grated Ginger
  • 1 large Sweet Potato
  • 2 cups Green Beans
  • 1/2 can of Full Fat Coconut Milk
  • 1/2 teaspoon Turmeric
  • 1 tbsp Garam Masala
  • 2 cups of Fresh Spinach

Instructions

  1. Peel Sweet Potato, slice and dice
  2. Roughly chop green beans
  3. Roughly chop your spinach
  4. Chop your green chile super fine
  5. Grate Ginger
  6. On the stove, add avocado oil to pan and wait 1-2 minutes for oil to heat up.
  7. Add all spices to hot pan and sauté for 2-3 minutes.
  8. Add in diced sweet potato and green beans.
  9. Add 1/2 cup of water and pinch of salt to soften the veggies.
  10. Cover with lid and let sit for 5-7 minutes until softened.
  11. Add in coconut milk, garam masala, turmeric and fresh spinach.
  12. Cover with the lid again for another 10 minutes.
  13. Add one squeeze of lemon.
  14. Pour over your favorite grain.  Today I mixed a bit of rice and a bit of quinoa!
  15. Say a prayer of gratitude, serve with love, and eat with joy.
