
Ingredients
- 2 tablespoons oil
- 2 teaspoons cumin
- 1 teaspoon crushed ginger
- 10 chopped curry leaves
- 1⁄4 teaspoon turmeric
- 1⁄2 teaspoon salt
- 1 teaspoon amchur powder
- 1⁄2 tablespoon garam masala
- 1⁄2 chopped green chili (optional)
- 4 cups yellow potato, chopped
- 1 1⁄2 cup peas
- 1 tablespoon corn starch (or potato starch)
Instructions
1. Heat oil in a non stick pan. Once heated, add cumin seeds until and sauté till fragrant and brown. Add the crushed ginger, curry leaves, turmeric, salt, amchur, garam masala, and green chili.
2. Sauté for a minute, then add the potato and peas. Sauté for 5 minutes on medium heat then place the lid on and cook until potatoes are soft. Check and stir every 5 minutes to make sure they aren't burning or sticking to the base of the pan.
3. Remove potatoes from heat and place into a medium sized bowl and sprinkle in the starch. Leave aside to cool while you prepare any burger toppings you prefer.
4. Once the potatoes have cooled, form into patties using 1/4 - 1/2 cup measurements depending on desired size!
5. Heat a flat cast iron pan or frying pan at medium heat and drizzle some oil. Place your patties on the pan for about 3-5 minutes either side or until browned and crispy. Assemble your burgers with your preferred sauces and toppings.
