Ingredients
- 1 cauliflower head (broken into small florets)
- 1⁄4 cup yogurt
- 3 tablespoons tomato paste
- 2 tablespoons coconut oil (or avocado oil)
- 1⁄3 cup non-dairy milk (unsweetened)
- 1⁄2 teaspoon turmeric
- 2 teaspoons smoked paprika
- 3 tablespoons chickpea flour
- 1 teaspoon salt
- 2 cups panko breadcrumbs (or GF breadcrumbs)
Instructions
1. Preheat oven to 425 degrees F.
2. Prepare the marinade. Add the yogurt, tomato paste, oil, milk turmeric, paprika, chickpea flour, and salt to a mixing bowl and whisk until smooth.
3. Coat the cauliflower. Dip pieces of cauliflower into the marinade to evenly coat, and then dip into breadcrumbs. Place onto a parchment lined baking sheet and spray with oil. Bake for about 20 minutes until golden brown and crispy.
