Double Chocolate Banana Bread
Ingredients
- 1 1⁄2 cup gluten free flour
- 1⁄2 cup cocoa powder
- 3⁄4 cups coconut sugar (you can also use unrefined brown sugar)
- 1 teaspoon baking soda
- 1⁄2 cup non-dairy milk
- 1⁄2 cup coconut oil (room temperature)
- medium-sized super-ripe almost on its way out banana
- 1 cup chocolate chunks
- 1 flax egg (1 tbsp flax meal 3 tbsp water)
Instructions
1. Preheat oven to 350F and grease your loaf pan (3 small or 1 large one).
2. Prepare your flax egg and set aside.
3. Sift the flour and cocoa powder into a mixing bowl, then add the baking soda and sugar, give it a good ol' mix.
4. In a blender, add in the banana, coconut oil and non-dairy milk, mix until smooth but do not over blend.
5. Add the wet ingredients to the dry ingredients along with the flax egg and whisk gently till smooth.
6. Fold in the chocolate chunks and pour batter into your loaf tins.
7. Place in the oven for 35 - 45 minutes (time will vary depending on your oven). Test at 35 minutes with a toothpick. If toothpick comes out clean, bread is ready. Remove from oven and let cool in the pan for about 10 - 15 minutes before removing from pan and letting the bread finish cooling on a cooling rack.
