Roasted Zucchini Pasta
Ingredients
- 1 box of pasta of choice
- 2-3 small zucchini
- 2 cups spinach
- 1⁄4 cup fresh mint
- 1⁄2 cup fresh basil
- 1⁄2 cup cashews
- 1 teaspoon salt
- 1⁄4 cup unsweetened nut milk
- 1 lemon (juice)
- 2 tablespoons feta cheese
Instructions
1. Preheat oven to 400.
2. Cook pasta according to box instructions.
3. Cut zucchini's in half and bake at 400 for 20 minutes. Once zucchini is cooked, add all remaining ingredients except the feta to blender & blend until smooth.
4. Coat the pasta in the sauce. Add feta cheese and fresh basil on top to garnish.
5. Say a prayer of gratitude, serve with love, and eat with joy ❤️
