Ingredients

  • 2 cups All purpose flour  
  • ½  tsp salt
  • ¾  cup mixed hot and room temp water ½ cup softened vegan butter

Instructions

1. Prepare the Dough. Mix the flour and salt in a bowl. Stir in the water and mix until a soft, non-sticky dough forms. Cover and let rest for 15-30 minutes  or make right away
2. Knead and Divide. When ready to prepare, knead the dough for 2–3 minutes until smooth. Divide into 8 equal portions (90–100g each) and shape into smooth balls. Lightly oil a plate and the dough balls. Place them on the plate with space between.
3. Shape the Roti. Stretch each dough ball on a smooth surface until paper-thin (circle or rectangle). Spread over a thin layer of butter and roll into a log, then coil into a spiral. Flatten gently and then roll out to 6-7 inch sized rotis.
4. Heat a non-stick pan over medium heat. Place each flattened roti on the pan and cook with a little oil until golden brown on both sides (about 4 minutes total), flipping frequently.
5. While hot, squash the roti to separate the layers. Enjoy warm with curry or your favorite sides.
