Herb Veggie Pasta Salad

Ingredients

For the Pasta Salad:
  • 2 cups dried protein pasta
  • 2 cups butternut squash (cubed)
  • 1 cup zucchini (chopped)
  • 1 cup peppers (chopped)
  • 6 sun-dried tomatoes
  • 5 picante peppers
  • 1 tablespoon avocado oil (or any high heat oil)
  • 1 teaspoon salt
For the Dressing:
  • 1 tablespoon mixed herbs
  • 1 tablespoon agave
  • 1⁄4 cup olive oil
  • 1⁄4 cup lemon juice
  • 1 teaspoon salt
  • 1⁄2 teaspoon black pepper

Instructions

1. Preheat oven to 400.

2. Cook your pasta according to instructions on box

3. Place butternut squash, peppers and zucchini on a baking tray lined with parchment paper and spray with oil and mixed herbs and a sprinkle of salt.

4. Bake for 15-20 minutes until veggies are roasted.

5. Add all dressing ingredients to a jar and mix until combined.

6. Add cooked and strained pasta and all remaining ingredients into a bowl.

7. Pour dressing over bowl of pasta and veggies and mix.

8. Say a prayer of gratitude, serve with love, and eat with joy ❤️
