Peach and Heirloom Tomato Salad
Ingredients
Salad
- 2 peaches
- 2 heirloom tomatoes
- Handful cherry tomatoes
- 2 cups arugula
- 1/2 cup vegan ricotta
- 1/4 cup pine nuts
Dressing
- 1/4 cup apple cider vinegar
- 1/3 cup extra virgin olive oil
- 1 tbsp dijon mustard
- 1 tbsp agave
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
1. Slice up peaches and tomatoes.
2. Mix all dressing ingredients into a jar and shake till combined and a thick consistency.
3. Assemble the salad by layering the arugula, heirloom tomatoes, peaches, ricotta and sprinkle the pine nuts.
4. When ready to eat, pour dressing over salad generously.
5. Say a prayer of gratitude, serve with love and eat with tremendous joy!
