Sweet and Sour Sriracha Potatoes

Ingredients

  • 24 ounces baby potatoes
  • 6 tablespoons Sriracha
  • 4 tablespoons maple syrup
  • 1 tablespoon sesame oil
  • 4 tablespoons liquid aminos
  • 2 limes (juice)
  • 1 1⁄2 tablespoon cornstarch
  • 2 tablespoons water

Instructions

1. Bring a pot of water up to a boil and pre heat oven to 450 degrees F.

2. Cut the potatoes in half and cook in water for about 8-10 minutes (until you can stick a fork through them).

3. Mix all ingredients for sauce together except for the cornstarch and water. Add 1 tablespoon cornstarch & water to a small bowl and mix together, and then add to the sauce ingredients.

4. Drain the potatoes and sprinkle with 1/2 tablespoon cornstarch. Bake for 20 minutes.

5. Add the sauce ingredients to a pan and heat until thick.

6. Once the potatoes are crispy, coat them in the sauce.
