Roasted Red Pepper Pasta Sauce
Ingredients
- 2 red bell peppers (roasted)
- 2 tablespoons oil
- 1 cup crushed tomatoes
- 1 teaspoon dijon mustard (or English mustard)
- 1⁄3 cup coconut milk
- 1 teaspoon salt (or more as per taste)
- 1 bay leaf
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon dried basil
- 1⁄4 cup parsley (loosely packed chopped)
- pasta of choice for serving
Instructions
1. If using raw bell pepper, roughly chop. Place oil into a pan and Sauté until soft. If you are using jarred roasted bell peppers, just chop and add to pan.
2. Add crushed tomatoes, asafoetida, mustard, and coconut milk, bay lead, oregano, and dried basil, and cook for 5 minutes.
3. Pour the sauce ingredients into a blender, removing the bay lead, and pulse till smooth.
4. Pour the sauce back into the pan and add finely chopped parsley, into sauce.
5. Cook on medium flame for 5 minutes.
6. Prep the pasta. Once the pasta is cooked, add the pasta to the sauce, coating to combine.
