Fattoush is a Levantine salad with roots across countries including Lebanon, Syria, Palestine, and Jordan. The name fattoush comes from the Arabic word "fatteh," which relates to bread being broken or crumbled, a nod to the pieces of crispy flatbread that make this salad so distinctive. The magic is in all those contrasting textures: crisp lettuce and vegetables, juicy pops of pomegranate, crunchy pita, and a sweet, tangy dressing. Pomegranate molasses may not be something you already have in your pantry, but once you do, I promise you’ll find yourself reaching for it all the time. I drizzle it over salads, roasted vegetables, and even avocado toast. Think of it a little like balsamic, but fruitier, tangier, and with that gorgeous sweet-sour pomegranate flavour. Then there’s sumac, a deep red Middle Eastern spice with a bright, lemony tartness that gives fattoush its unique zing. Together, they make this salad anything but boring.
