Apple Blackberry Crumble
Ingredients
For the Filling:
- 170 grams blackberries
- 4 honey crisp apples
- 1⁄4 cup maple syrup
- 1 lemon (zest)
For the Topping:
- 1 cup rolled oats
- 1 cup almond flour
- 1⁄3 cup coconut sugar
- 1 cup pecans (chopped)
- 1 tablespoon cinnamon
- 3 tablespoons non dairy butter (softened)
- 1⁄4 cup yogurt
Instructions
1. Pre-heat oven to 375F.
2. Peel & chop your apples into cubes and cut your blackberries in half.
3. Mix together in a bowl with maple syrup, cinnamon, & lemon zest.
4. Prep the topping. Combine almond flour, oats, coconut sugar, cinnamon, & pecans into a separate bowl & mix. Add butter & yogurt into the dry mix till it resembles wet sand.
5. Layer the apple filling into a baking dish with the crumble topping on top & drizzle generously with maple syrup.
6. Bake for 40 minutes until the topping is crispy & filling is soft. If the topping starts to brown too much before the inside is ready, you can cover it with foil and let it cook for a little longer!
7. Remove from oven and serve with toppings of choice like coconut cream or ice cream.
