Ingredients
For the muffins:
- 1 1⁄2 cup oat flour
- 1 1⁄2 cup almond four
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon powder
- 1 teaspoon pumpkin spice
- 2 apples, grated
- 1⁄4 cup vegan butter, melted
- 1⁄2 cup non dairy milk
- 1 teaspoon vanilla extract
- 2 flax eggs
For the Pecan Streusel:
- 1⁄4 cup almond flour
- 1⁄4 cup oat flour
- 1⁄4 cup chopped pecans
- 1⁄4 cup coconut sugar
- 1⁄4 cup vegan butter, melted
For the Glaze:
- 3 tablespoons almond butter
- 1⁄4 cup maple syrup
- 1 tablespoon extra virgin coconut oil
Instructions
1. Preheat oven to 375F and line a muffin tray with liners.
2. Add all dry ingredients for muffins into a bowl.
3. Prepare flax egg by mixing water and flax meal and set aside for a couple of minutes.
4. Add all wet ingredients into a smaller bowl and when flax is thick and gloopy add into the wet ingredients and mix.
5. Add dry ingredients to the wet and mix. The batter will be thick.
6. Set aside and make streusel mix by simply adding all ingredients into a bowl and mix. It will resemble wet sand.
7. Spoon batter into your muffin tray and add streusel on top.
8. Bake in the oven for 15-17 minutes or until golden brown.
9. Meanwhile, make your glaze by mixing all ingredients in a bowl.
10. Once the muffins are done, take them out and let them cool inside the tray for about 10 minutes, then drizzle with the glaze.
11. Sprinkle a whole lotta love, say a prayer of gratitude and serve with joy!
