Chunky Oatmeal Raisin Cookies (Levain Bakery Style)

Ingredients
- 1 cup butter (cold, chopped into cubes)
- 1 cup brown sugar
- 2 cups gluten free flour (or all purpose flour)
- 1 cup rolled oats
- 1 teaspoon cinnamon
- 1 cup raisins
- 1⁄2 cup walnuts
- 3⁄4 teaspoons baking soda
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon salt
Instructions
- Preheat oven to 400F
- Add butter and sugar into a bowl and cream together until light and fluffy (you can use a hand mixer or fork!)
- Add in the egg replacer and mix together
- Add the remaining ingredients and gently fold together into cookie dough
- Let the dough chill in the fridge for about 10-15 minutes
- Separate dough into large balls and place on lightly colored cookie sheet. Lightly press on top of dough to smooth out. The dough makes 8-12 extra large cookies.
- Bake for 10-12 minutes or until golden brown on the top. Let them rest for at least 10-15 minutes to set before eating
