Corriander Chickpea Flour Crepe

Ingredients

  • 1 cup coriander
  • 1 cup water
  • 1 cup chickpea flour
  • 1 inch fresh ginger
  • 1 teaspoon salt
  • 1⁄2 tablespoon oil

Instructions

1. Wash the coriander and place into a blender with the water. Blend till smooth then add in the rest of the ingredients and continue to blend till super smooth.

2. Warm a cast iron flat pan or a non stick crepe pan on medium heat and brush with a little oil then fill half of a ladle with the batter and pour onto the middle of the pan, working fast spread in circular motions till evenly spread.

3. Let it cook on one side then brush a little oil before you flip it over.

4. Once cooked, place on a mesh tray while you make the rest.

Serve with the Masala Spiced Yoghurt or Coriander & Mint Chutney.
