Ingredients
For the Blondie:
- 440 grams cooked chickpea (boxed or cooked yoself)
- 1⁄3 - 1⁄2 cup maple syrup (depending on how sweet you prefer)
- 1⁄2 cup almond butter
- 1 teaspoon vanilla extract
- 1⁄4 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 1⁄2 cup chocolate chips
For the Brownie:
- 2 tablespoons cocoa powder
- 2 tablespoons oat flour
Instructions
1. Preheat oven to 350F/ 175C
2. Prepare the blondie batter. Drain the water from the chickpeas and add to a food processor with all blondie ingredients except the chocolate chips. Once smooth pour out half the mixture into a mixing bowl and add half your chocolate chips (save the other half to sprinkle on top). Set aside.
3. Prepare the brownie batter. In the food processor with the remaining chickpea batter, add in the cocoa powder and oat flour and mix till combined (the mixture will become a little thicker).
4. Bake. Line a baking tray with spray or parchment paper. Pour and spread the brownie batter first and then layer the blondie mixture on top. Bake in the oven for 15-20 minutes, keep an eye on it as it starts to brown and use a sharp knife or toothpick to test when it’s done, it should come out clean. Once baked, take out the oven and let cool for at least 10 minutes before attempting to cut them :)
