Ingredients

For the Salad:
  • 1 cup cucumber
  • 1 cup pepper
  • 1 cup tomato
  • 1 cup pickles
  • 1 cup parsley
  • 1 cup tofu

For the Dressing:
  • 1⁄3 cup extra virgin olive oil
  • 1⁄4 cup apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon black pepper
  • 1 tablespoon agave

Instructions

1. Chop up all the veggies into tiny pieces.

2. Cube your tofu and sauté until golden brown.

3. Combine chopped veggies & tofu into a bowl.

4. Mix together all dressing ingredients and pour over salad.

5. Mix it up, Say a prayer of gratitude, serve with love, and eat with joy ❤️
