Veggie & Tofu Tray Bake

Ingredients
- 1 can chickpeas
- 1 large red pepper
- 1 sweet potato
- 2 small broccoli heads
- 1 tofu block
Spices:
- 3 tablespoons avocado oil
- 1 tablespoon garam masala
- 1 tablespoon smoked paprika
- 1⁄2 teaspoon turmeric
- 1⁄4 teaspoon salt
Topping:
- 1 tablespoon vegan yogurt
- 1⁄4 teaspoon red pepper flakes
Instructions
- Preheat oven to 450F
- Remove tofu from packaging & press to remove the excess water for 10 minutes
- use something heavy to press
- Chop up all veggies into small, bite size pieces and set aside
- Drain and rinse the chickpeas and set aside
- Chop pressed tofu into small pieces
- Add all veggies, tofu, & chickpeas to a baking pan
- In a small bowl add all the spices & oil and mix together to create a marinade
- Drizzle the marinade over top of the veggies, tofu, & chickpeas and mix until everything is fully coated
- Bake at 450 for 30 minutes or until veggies & tofu are crispy
- *optional* top with vegan yogurt & crushed red pepper flakes
