Ingredients
- 2 zucchinis
- 1 cup pizza sauce (store bought)
- 1 tablespoon olives
- 1⁄3 cup mushrooms
- 1 tablespoon vegan meat crumbles
- 1⁄4 cup breadcrumbs
- 1⁄2 cup shredded cheese (I used Miyokos mozzarella)
- 1 teaspoon oregano
- 1 teaspoon basil
Instructions
1. Preheat your oven to 400F.
2. Wash and cut the zucchini's in half the long way. Scoop out the inside bits of the zucchini halves and place on baking sheet.
3. Chop up mushrooms and olives and add to pizza sauce with meat crumbles (can also add the scooped out zucchini to the mixture).
4. Fill zucchini with pizza sauce mixture and top with breadcrumbs, shredded cheese, & herbs.
5. Bake for 30 minutes - until you can put a fork through the zucchini and the tops are crisp. Enjoy!
