Gluten Free Thumbprint Jam Cookies

Prep: 10 minTotal: 30 minServings: 12 servings
These are the sweet little jammy cookies that feel cozy, nostalgic, and just wholesome enough to have with tea in the afternoon. They’re naturally gluten-free, made with buckwheat flour and almond flour, which give them such a lovely texture and flavor. The buckwheat adds a slightly nutty, earthy depth, while the almond flour keeps them soft, tender, and a little buttery without needing any dairy. They’re soft in the middle, gently golden around the edges, and filled with a glossy pool of jam that makes them feel instantly more fun.

“I have been making this recipe for many years. I introduced them to my family as ‘my healthy but good cookies’ since everyone in my family was skeptical. (Not sure why – they’re gorgeous but it might be that they are skeptics of my vegan past and healthy cooking LOL) And the ‘healthy but good cookies’ were a hit. My partner just came into my office today with a cute little face and said ‘heyyyyy…. you know what i miss…… you know those cookies…..’. HAHA. So now I will make them again tonight. :)”
