Crisp, golden ciabatta gets loaded up with a creamy olive and sun-dried tomato spread, then topped with juicy tomato slices and melty vegan mozzarella for something that tastes way more impressive than a quick toast has any right to. All the pizza energy, none of the dough-making. Easy, generous, and ready in minutes.

instructions
Cut the ciabatta loaf in half lengthways so you have two long pieces.
Add the vegan cream cheese, kalamata olives, sun-dried tomatoes, chillies, parsley, and English mustard to a food processor.
Blend until combined into a thick, flavorful spread. It can be smooth or slightly textured, depending on what you like.
Spread the mixture generously over the cut side of each ciabatta half, making an even layer all the way to the edges.
Place 6 tomato slices on top of each ciabatta half.
Sprinkle the shredded vegan mozzarella over the tomatoes.
Finish with dried herbs.
Air fry at 350°F for about 15 minutes, or until the ciabatta is crispy, the tomatoes have softened, and the vegan mozzarella has melted.
Let cool for a minute, then slice into pieces.
Say a prayer of gratitude, serve with love, and eat with joy.
notes
Spread the cream cheese mixture all the way to the edges so every bite has flavor.
A slightly textured spread is lovely here, so don’t worry about blending it completely smooth.
If you do not have an air fryer, bake in the oven at 375°F until the bread is crisp and the cheese has melted.
Use gluten-free ciabatta if you want to make this gluten-free.
Check that your vegan cream cheese and vegan mozzarella are nut-free if needed.
This is best eaten straight away while the bread is crisp and the topping is warm.
Serve with a simple salad, soup, roasted vegetables, or as a snacky lunch.
