I’m sorry but you cannot beat homemade sourdough croutons! These are the easiest way to make soup or salad feel instantly better and upcycle stale bread! Crisp, golden, crunchy little bread cubes that take barely any effort and make everything feel more homemade. Perfect for using up leftover bread before it goes stale - i use these in my caesar salad and ontop of my creamy tomato soup.

Preheat the oven to 400°F.
Line a baking sheet with parchment paper.
Slice the bread into small cubes, keeping them as even in size as possible so they bake at the same pace.
Place the bread cubes onto the prepared baking tray.
Drizzle with the olive oil, sprinkle salt and toss with your hands or a spoon until the cubes are lightly coated. They should feel coated but not soaked.
Spread the bread cubes out into an even layer.
Bake for 10–15 minutes, tossing halfway through, until golden brown and crisp.
Remove from the oven and let the croutons cool on the tray. They will crisp up a little more as they cool.
Use on soups, salads, bowls, or as a crunchy snack.

Day-old bread works especially well because it crisps faster and holds its shape.
Cut the bread cubes evenly so some pieces don’t burn before others are crisp.
For extra flavor, toss with a pinch of salt, dried herbs, nutritional yeast, smoked paprika, or black pepper before baking.
For a gluten-free version, use gluten-free bread.
Let the croutons cool completely before storing so they stay crisp.
Store in an airtight container at room temperature for up to 3 days.
