  1. Start by making the chia pudding layer. Add the chia seeds, almond milk, vanilla extract, and cinnamon powder to a medium bowl.
  2. Stir well with a fork or whisk, making sure the chia seeds are evenly mixed through the milk and not clumping together.
  3. Cover and place in the fridge for at least 5 hours, or ideally overnight, until thickened into a pudding-like texture.
  4. The next morning, check the texture. If the chia pudding feels too thick or gloopy, add a splash more almond milk and stir well with a fork until it loosens to the texture you like.
  5. Make the avocado pudding layer. Add the avocado, cocoa powder, pear or banana, and almond milk to a blender or food processor.
  6. Blend until completely smooth and creamy. Taste and adjust if needed, adding a little more pear or banana if you want it sweeter.
  7. To assemble, spoon the chocolate avocado pudding into the bottom of small jars, bowls, or serving glasses.
  8. Add the chia pudding on top of the avocado layer.
  9. Finish with fresh fruit, a drizzle of almond butter, soaked fruit, or nuts.
  10. Chill for at least 15 minutes before serving, or enjoy straight away if everything is already cold.
  11. Store any leftovers in an airtight container in the fridge for up to 3 days.

notes

  • Stir the chia pudding really well before chilling, then stir again after a few minutes if you can. This helps stop the chia seeds clumping together.
  • Use banana for a sweeter, creamier chocolate layer, or pear for something lighter and more subtle.
  • Start with 2 tbsp cocoa powder, then add the extra tablespoon if you want a deeper chocolate flavor.
  • If you want this nut-free, use oat milk, soy milk, or coconut milk instead of almond milk, and choose nut-free toppings.
  • The chia layer will continue to thicken as it sits, so loosen with extra milk before serving if needed.
  • For extra protein, use soy milk in the chia pudding or add hemp seeds on top.

“The chia to milk ratio seems very off. I used Malk didn’t absorb all the chia so they got stuck on the bottom and it was just a mass of chia. I did two avo and one whole banana with the cocoa and Malk. The flavor was terrible. I added more cinnamon and honey to the top but I still couldn’t even eat one bite. I wasted so many ingredients. Pretty disappointed.”
