Place a skillet or pan over medium heat and add the grapeseed oil.
Add the cumin seeds and mustard seeds. Sauté for about 1 minute, until the seeds begin to pop and smell fragrant.
Add the chopped green chillies and stir for a few seconds.
Add the cabbage, red bell pepper, turmeric, garam masala, asafoetida, and curry leaves if using.
Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften but still have a little texture.
Crumble the tofu into the pan using your hands or a fork.
Add the liquid aminos and lemon juice, then stir until the tofu is evenly coated in the spices.
Place the lid on the pan and cook for 5 minutes so the tofu can absorb the flavor.
Remove the lid, add the chickpeas, and stir well.
Cook for another 5 minutes over medium heat, until the chickpeas are warmed through and everything is well combined.
Taste and adjust with more lemon juice, liquid aminos, or salt if needed.
Serve warm or at room temperature.
