In Ayurveda, fresh dill is often used to support agni, the digestive fire, and is especially loved for helping with bloating, gas, and heaviness after meals. It brings a lovely fresh flavor to the dal while making the whole bowl feel even more comforting and easy to enjoy. Perfect with rice, roti, or on its own when you want something warm and nourishing. Soaking the lentils before cooking can help soften them, reduce cooking time, and make them feel a little easier to digest. It’s not essential if you’re short on time, but if you remember to soak them, your dal will usually cook faster and become softer and creamier. I usually make my daal in an instant pot because it’s quick, easy, and makes the dal beautifully soft and creamy, but you can absolutely make it on the stovetop too, it just needs a little more stirring and love.
