This is a big, colorful, crunchy salad that actually feels like a main meal. I LOVE salads like this because you get your veggies, protein, carbs, and healthy fats all in one bowl, so it feels fresh but still really satisfying. The tofu is crispy, there are plenty of fresh shredded veggies, and the creamy tahini dressing is silky, tangy, and just thick enough to coat everything properly. Then you have the little popcorn pumpkin seeds on top for that salty, snacky crunch. Bright, filling, and very much not a boring salad situation.

“It was DELICIOUS !! I knew it would be good but not THAT good ! :) However, be careful, some items are missing in the ingredient list. I personnally used 1 lbs of tofu and 1/3 cup of pumpkin seeds that I mixed with the marinade. I put it in the oven at 450F for 25 min because I don’t have an air fryer. Also, I usually use maple syrup instead of agave.”
