This is a big, cozy pot of curry with so much personality. It’s warming, gently sweet from the plantain and sweet potato, full of bold Jamaican curry flavor, and made even more comforting with little homemade spinners cooked right in the pot. I created this recipe for my Cooking With Friends Who Don’t Cook episode with Winnie Harlow, after she shared that Jamaican curry is one of the dishes that reminds her of home. So I thought I’d give it a go and make a vegan version. It’s hearty, colorful, full of flavor, and exactly the kind of meal you want with roti on the side. The Spinners are an optional addition in the curry but definitely make it feel more authentic!
