Cashew Rose & Chocolate Fudge ‘kajoo Katli’

Ingredients
- 1 1⁄3 cup cashew flour (ground cashews)
- 1⁄2 cup coconut sugar (or unrefined brown sugar)
- 1⁄2 teaspoon cardamom
- 3 tablespoons water
- 1 teaspoon rose water (optional)
- 100 grams chocolate (to melt)
- chopped pistachios
- dried rose petals (and i used dried marigolds to top)
Instructions
- Add the coconut sugar, water and rose water into a medium sized pan and heat till the sugar dissolves into syrup.
- Sieve the cashew flour into the pan and cook for about 5 minutes on low heat, it should start to thicken
- Scoop it out onto greased parchment paper and let it cool on the side for 5 minutes, if you're in a rush pop it in the fridge for 10 minutes then take it out and shape into a block, you can use a greased knife around the sides to create sharp edges
- Wrap in the parchment paper to keep shape and place back into the fridge while you melt the chocolate
- Use the double boiler technique to melt the chocolate; fill a saucepan half way with water and boil. Place a heatproof bowl on top (make sure the water is not touching the base of the bowl) add the chocolate chips and melt
- Take the fudge out of the fridge (check it has set, if not leave in for another 5-10 minutes) and spread a layer of chocolate on top as thick as you want :) Then sprinkle on your toppings, i use rose petals and chopped pistachios
- Place into the fridge again and let it chill completely for at least 1 hour!
- Take it out of the fridge and cut into pieces, the chocolate may crack a little but if u do it fast and with a sharp knife you minimize the damage haha
- Now you can put them into little mini cupcake cases for your gift box like i did or just enjoy them as is :)
