30 Minute Creamy Lemon Spaghetti with Pistachio Gremolata

Description

THIS zesty creamy spaghetti is so simple and just so good! You may think its a little weird that the pasta isn't drained but to be honest many creamy sauces have starches added into them so really we are just keeping the starches released from the spaghetti instead :) Try this out and let me know what you think!! I believe you will be pleasantly surprised!

Instructions

  1. In a large pot add all spaghetti ingredients except the spaghetti and cook on low heat

  2. once it starts to boil slowly push in your spaghetti and make sure it is covered by the liquid, this may take a couple of minutes but try not to break the spaghetti otherwise its not cute when you eat it 😂

  3. Place lid onto the pot and cook on low to medium heat for 15 minutes

  4. Meanwhile, prepare your gremolata, grate the zest off your lemons, toast your pistachios and chop your parsley then add all ingredients into a bowl and mix

  5. at 15 minutes uncover the pot and cook at a medium to high heat for 5 minutes to cook off excess liquid ( but make sure it stays saucy too!)

  6. The pasta will thicken as it cools so i suggest serving immediately or if you are not serving straight away you will need to add a little plant based milk or water when you reheat it to serve, just remember you may need to a add a little more salt if you alot more milk!

  7. Pour spaghetti into your pasta bowls and sprinkle with gremolata, you can add some vegan parmesan here too if you like!

  8. ♡ Sprinkle some joy, say a prayer of gratitude and serve with love.

Note

Notes/Substitutions: You can use sunflower seeds or pumpkin seeds instead of the pistachio for a nut free option.
