Description

I made these with my Plum chutney this week and it really reminded me of home! My family love a good cheese board, we though that might change once we turned vegan but luckily vegan cheeses have just gotten better and better with time and we have learnt how to make many ourselves too!
Crackers chutney & thick chunks of mature cheddar cheese was also an after school snack me and my sister would often indulge in....ooooh the joy in food memories!

  1. Preheat your oven to 325F
  2. Combine the oat flour, baking powder, salt, caraway seeds flaxmeal and pepper in a small mixing bowl, then whisk them together.
  3. Add the melted butter and maple syrup add it to the flour mixture and mix everything together. The mixture will be a little dry and clumpy.
  4. Slowly add the warm water and stir to combine. You should have a soft dough that holds together well, but is not at all sticky. If your dough is too dry, add another 1/2 teaspoon of water at a time until it holds together. If your dough is too wet, add another teaspoon of flour at a time until it is no longer sticky. Knead your dough for a couple minutes till it forms a smooth dough
  5. Roll out the dough between two parchment paper pieces ( which makes it easier) or in a non stick surface. Roll out to desired thickness!
  6. Use a round cookie cutter to cut out the crackers
  7. Place on a baking tray lined with parchment paper and bake for about 20 minutes (this will change depending on the thickness of your crackers) or until golden brown once cooked transfer to a rack to cool, let them cool completely and enjoy on their own or my favorite combo... spiced plum chutney & thick slices of (vegan) cheddar!
  8. Store any that are not eaten immediately in an airtight container for 1 week
