  1. Pre-heat oven to 400F
  2. Chop the eggplant and red bell pepper
  3. Rinse the chickpeas
  4. Season the eggplant, pepper, and chickpeas with the tahini, paprika, za'atar, & salt
  5. Bake the veggies & chickpeas for 20 minutes
  6. Warm up the pita & cut open
  7. Layer inside the pita with hummus, veggies, chickpeas, & sauerkraut
  8. Option to sprinkle vegan feta on top
  9. Drizzle the cilantro dressing
