Massaged Kale, Zesty Orange, Sweet Date & Shaved Fennel Salad

  1. Remove leaves off the kale stem and roughly chop. In a large bowl combine the kale, olive oil and orange juice. Massage the kale using your hands and infuse some love as you pamper the kale. Do this for about 5 minutes then let it sit to the side as you prepare the rest of the salad

  2. Use a mandoline (ideally) or a sharp knife to cut thin slices of the fennel.

  3. Cut the juicy sweet orange into slice into 8 ( little triangles). Next up, mix all the dressing ingredients into a jar and give it a good mixy mixy. To assemble, add kale into a bowl, then the fennel shavings, then tear apart your dates and throw them on. Add the orange pieces followed by the almonds and lastly shake up the dressing one last time before you drizzle it on top. Imagine it in slo mo..ooooohhh weee that looks goood!!!
