Roasted Veggie & Quinoa Salad

Instructions

  1. Cook quinoa according to package

  2. Chop up the mini bell peppers

  3. Strain and rinse the chickpeas

  4. Lay the cooked quinoa, chopped peppers, and rinsed chickpeas on a baking sheet

  5. Bake at 450˚F for 20 minutes

    times may vary - cook until all are crispy
  6. Wash the kale and finely chop it

  7. Add the kale to a bowl and layer with the cooked quinoa, chickpeas, and peppers

  8. Add all the dressing ingredients to a jar and mix together

  9. Drizzle dressing over the salad

  10. Top with vegan feta cheese and avocado
