Description

Diwali treats special 2 of 3! Ok so this is inspired by the super classic Indian sweet Kaju Katli. It is usually made form white sugar and cashews so i thought i would mix it up and try something new for Diwali this year and OMG i could not stop eating these. SUPER fudgey and decadent! In my youtube video i also show how i make these cute treat Diwali gift boxes...(when i make them they potentially look like the 5 year old me made them..but i'm sure you will do a better job haha)!

  1. Add the coconut sugar, water and rose water into a medium sized pan and heat till the sugar dissolves into syrup.
  2. Sieve the cashew flour into the pan and cook for about 5 minutes on low heat, it should start to thicken
  3. Scoop it out onto greased parchment paper and let it cool on the side for 5 minutes, if you're in a rush pop it in the fridge for 10 minutes then take it out and shape into a block, you can use a greased knife around the sides to create sharp edges
  4. Wrap in the parchment paper to keep shape and place back into the fridge while you melt the chocolate
  5. Use the double boiler technique to melt the chocolate; fill a saucepan half way with water and boil. Place a heatproof bowl on top (make sure the water is not touching the base of the bowl) add the chocolate chips and melt
  6. Take the fudge out of the fridge (check it has set, if not leave in for another 5-10 minutes) and spread a layer of chocolate on top as thick as you want :) Then sprinkle on your toppings, i use rose petals and chopped pistachios
  7. Place into the fridge again and let it chill completely for at least 1 hour!
  8. Take it out of the fridge and cut into pieces, the chocolate may crack a little but if u do it fast and with a sharp knife you minimise the damage haha
  9. Now you can put them into little mini cupcake cases for your gift box like i did or just enjoy them as is :)
