Description

Diwali treats Special 3 of 3!! Nankathai is basically an Indian cookie. I REALLLY love these cookies especially with the orange almond twist...sooooo tasty. I also gave you two options ( that i discovered by chance) a chewy cookie and a biscotti style, all just with the change of butter quantities, i recommend you make a batch of both..they really taste and feel like completely different cookies!   1. Preheat oven to 390F

  2. Sieve the besan flour into a mixing bowl, add the baking soda, chai masala, cardamom and chopped apricots and stir

  3. Add in the butter, yoghurt, almond essence and orange zest and give it a good ol mix till combined and it forms a ball

  4. Place in the fridge for 10 minutes

  5. Take the dough out of the fridge and use a small cookie scoop and place onto a baking tray lined with parchment paper

  6. Top with shaved almonds and bake for 8-10 minutes at 390F

  7. Once cooked and golden brown in color take out of the oven and let them cool a little before you eat

  8. ♡ Say a little prayer, stir in some love, and eat with soooooo soooo sooo much joy!
