When brownie met blondie and did a collab....😂SO i once tried a cheesecake for Radhanath Swami with chickpeas as the base ingredient, and it was sooo gooooood! I remembered it this week but i fancied a fudgy brownie blondie kinda thang instead..i found so many versions of blondies with chickpeas so i thought id do my own little spin on it and HERE YOU HAVE IT! i fed it to 6 people this week and all of them could not even begin to guess what was in it and they really did love it so much, super fudgy & decadent! BUT BACK to the chickpeas, seriously how cool is that!! You really cannot tell its chickpeas and it actually gives it such a great texture and flavor, also this recipe just uses fats from the almond butter so there's no added oils or butter so basically what i'm saying is we can eat these everyday all day hahaha!

Instructions

  1. Preheat oven to 350F/ 175C
  2. drain the water from the chickpeas and add to a food processor with all blondie ingredients except the chocolate chips
  3. Once smooth pour out half the mixture and add half your chocolate chips (save the other half to sprinkle on top)
  4. In the other half add in the cocoa powder and oat flour and mix till combined ( the mixture will become a little thicker)
  5. In a baking tray either spray with oil or line with parchment paper ( so mine sits well in the pan i sometimes wet the paper a little), even if you don't have one thats the perfect size that is OKK DO NOT PANIC, i usually just spread it out to my desired thickness and fold the parchment paper over to make a barrier :)
  6. Pour and spread the brownie batter first and then layer the blondie mixture on top

  8. Bake in the oven for 15-20 minutes, keep an eye on it as it starts to brown, use a sharp knife or toothpick it should come out clean but i always say take it out when in doubt with these because you want them fudgy and moist!
  9. Once baked, take out the oven and let cool for at least 10 minutes before attempting to cut them :)
